High King Highball

Whiskey

The High King Highball features the smooth, rich flavor of Clontarf Irish whiskey complemented by the tartness of lemon and grapefruit juices. Aperol adds a slightly bitter, herbal note, while muddled raspberries provide a touch of sweetness. Peychaud’s bitters add depth and complexity, and club soda gives the drink a refreshing effervescence. All in all, it’s a light, perfectly balanced summer cocktail for whiskey lovers.

Ingredients

  • 3 large raspberries
  • 1/2 oz simple syrup
  • 2 oz Clontarf Irish whiskey
  • 1/2 oz Aperol
  • 3/4 oz lemon juice, freshly squeezed
  • 3/4 oz grapefruit juice, freshly squeezed
  • 1 dash Peychaud’s bitters
  • Club soda, to top
  • Garnish: lemon wheel
  • Garnish: raspberry

Preparation

  1. In a cocktail shaker, muddle the raspberries and simple syrup.
  2. Add the Irish whiskey, Aperol, lemon juice, grapefruit juice and bitters into the shaker with ice, and shake until well-chilled.
  3. Fine-strain into a Collins glass over fresh ice and top with the club soda.
  4. Garnish with a skewered lemon wheel and raspberry.
